Let's be real - carrot cake recipes usually demand a small fortune in ingredients, and ain't nobody got time for that! As a self-proclaimed lazy baker,I set out to create the ultimate shortcut version that's not only simple (we're talking minimal-ingredient-simple), but packed with gut-loving collagen, completely nut-free and egg-free for allergy-friendly enjoyment, and - most importantly - ridiculously tasty. Who knew cutting corners could taste this good?
Base Layer Components:
⅓ cup premium hemp seeds (xtaviya. brand recommended)
⅓ cup finely ground sunflower kernels
15ml (1 tablespoon) cold-pressed hemp seed oil
Moist Cake Stratum:
240ml (1 standard cup) tightly packed, freshly shredded carrots
½ serving (about 7g) unflavored grass-fed gelatin
1 full serving (approx. 15g) hydrolyzed collagen peptides
2 measured scoops (60g) vanilla plant protein powder
5ml(1 teaspoon) Ceylon cinnamon
1.25ml (¼ teaspoon) freshly grated nutmeg
Enhancement option: 60ml plumped raisins (hydrated in warm liquid and strained)
Creamy Topping Mixture:
240ml (1 metric cup) thick Greek-style yogurt
15ml raw, unfiltered honey
½ portion gelatin (same as cake layer)
Easy No-Bake Carrot Cheesecake Instructions:
Crust: Mix all ingredients and press firmly into your pan/mold.
Cake Layer: Combine all ingredients and spread evenly over crust.
Cheesecake Layer: Blend ingredients until smooth, pour over cake layer.
Chill for at least 2 hours until set. Drizzle with coconut butter if desired.
Tips:
• Use parchment paper for easy removal
• Let set completely before slicing
